Hello Summer. Long time no see. Last time we heard, you were hanging out with that big yellow ball in the sky, somewhere near Mauritius. Or was that Marbella?

Either way, it's been a long cold winter without you, so to welcome you back, we've made this special recipe in your honour. Couscous, beetroot and fresh spinach, with a sprinkling of pumpkin seeds and a zesty lemon twist. Summer in a pot.
