An innocent guide to fermentation Why might smoothies ferment? Fruit contains natural fruit sugars. Technically speaking, fermentation is the breakdown of these sugars, which releases carbon dioxide and creates the fizz. This process occurs with every fresh juice drink and is the reason why it is important to keep fresh drinks refrigerated (the cold temperature dramatically slows down the fermentation process). If your smoothie has been kept in the fridge and is within its enjoy by date it is extremely unlikely to have fermented. Is a fermented smoothie dangerous? No. Fermented drinks are not harmful. They will taste 'off' but they are definitely not dangerous. Will it make me ill? No it won't. Will it make me drunk? Probably not. I'd stick to shandy if I were you.
